The Cabbage Crunch Salad I used to love from Whole Foods! It’s a shame they no longer sell it, but now you can make it at home with this recipe!

 

 

Cabbage Washing Methods 

Option 1
  1. Cut the cabbage into quarters, remove the core, and peel off the leaves.
  2. Dissolve green tea bags or green tea powder in water. (This method helps protect the carotene better than using vinegar water.)
  3. Let it sit for about 10 minutes.
  4. Gently shake the cabbage in the bowl and rinse it under running water.
  5. Shred the cabbage and set it aside.
Option 2
  1. Shred the cabbage first and then wash it in green tea water. (Using a mandoline)
  2. After washing in green tea water, drain and set aside.

** Shaking cabbage in standing water helps remove impurities more effectively. Start by shaking it in the bowl, then rinse it two or three times under running water. 

**Personally, I prefer washing the leaves first and then shredding them. I feel like this helps preserve the nutrients better.

Ingredients

Main Ingredients
  • 6 cups shredded cabbage
  • 1/4 cup sliced almonds
  • 1 tbsp sesame seeds
  • 1 stalk of green onion
Honey Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tbsp vinegar
  • 1 tbsp honey
  • A pinch of salt
*1 Cup = 250ml / 1 tbsp = 15 ml / 1 tsp = 5 ml
All measurements are based on US/Canada measuring spoons and cups.

Instructions

  1. Shred the cabbage and prepare it in a large bowl.
  2. Lightly toast the sliced almonds in a pan without oil.
  3. Add sesame seeds. You can lightly toast them for extra flavor.
  4. Add the extra virgin olive oil, vinegar, and honey, then mix well.
  5. Chop the green onion and add it to the salad.
  6. Toss everything together and serve.
