The Cabbage Crunch Salad I used to love from Whole Foods! It’s a shame they no longer sell it, but now you can make it at home with this recipe!
Cabbage Washing Methods
Option 1
- Cut the cabbage into quarters, remove the core, and peel off the leaves.
- Dissolve green tea bags or green tea powder in water. (This method helps protect the carotene better than using vinegar water.)
- Let it sit for about 10 minutes.
- Gently shake the cabbage in the bowl and rinse it under running water.
- Shred the cabbage and set it aside.
Option 2
- Shred the cabbage first and then wash it in green tea water. (Using a mandoline)
- After washing in green tea water, drain and set aside.
** Shaking cabbage in standing water helps remove impurities more effectively. Start by shaking it in the bowl, then rinse it two or three times under running water.
**Personally, I prefer washing the leaves first and then shredding them. I feel like this helps preserve the nutrients better.
