If you’re cooking the pasta in advance, toss it with a little olive oil after draining to prevent it from sticking together.
Cooking Time Based on Texture
- Firm texture → 7 minutes
- Al dente → 8 minutes
- Soft texture → 9–10 minutes
Cooking time may vary depending on the brand, so it’s always a good idea to follow the instructions on the package. Also, since the pasta will be heated again with the sauce in the pan, keep that in mind when boiling it.
How to Purge Clams
- Gently scrub the clams and rinse them 2–3 times.
- Dissolve 1 Tbsp of salt in a bowl of water. Matching the salinity of seawater helps the clams purge effectively (1 Tbsp salt per 1L water).
- Place the clams in a colander, then submerge the colander in the salted water. This way, the impurities will sink to the bottom while keeping the clams separated.
- Cover the bowl to block light and let it sit for at least 2 hours.
- The clams will expel sand and impurities.
- Rinse the clams in clean water, and they’re ready to use!

Tomato Sauce (Base Sauce)
- 1 can whole tomatoes (796ml, around 26 oz ~ 27 oz)
- ½ small onion
- 5 cloves garlic
- Italian parsley
- ½ tsp sugar
- ½ tsp salt

Spicy Clam Pasta Sauce
- ¼ small onion
- 3 cloves garlic
- ¼ tsp crushed chili flakes
- 2 Tbsp baby clams (optional, canned or jarred)
- 20 clams
- ¼ cup white wine
- 1.5 large ladles tomato base sauce (around 120~130 ml, half a cup)
Pasta
- Pasta noodles 180 g
- Salt 18 g~20 g
- Water 2 L
All measurements are based on US/Canada measuring spoons and cups.
Instructions
Making the Tomato Base Sauce
- Finely chop ½ of a small onion.
- Mince 5 cloves of garlic.
- Roughly chop some Italian parsley.
- Open a can of whole tomatoes and transfer the contents to a bowl. Use your hands to break them up into chunks.
- Heat a pan over medium heat and add 4 Tbsp of extra virgin olive oil. Sauté the chopped onion first, then add the minced garlic. Cook for about 3 minutes, stirring frequently, until fragrant and lightly golden (but not browned).
- Add the chopped parsley.
- Pour in the crushed tomatoes from Step 4, then season with ½ tsp sugar and ½ tsp salt. Let it simmer for 15–20 minutes.
- Keep the lid off while simmering to allow excess moisture and acidity to cook off. Stir occasionally over medium heat.
- Remove the parsley stems before using.
💡 Make-Ahead Tip
- One can of tomatoes makes 4–5 servings of base sauce. You can freeze any leftovers for later use.
- Frozen tomato sauce is easy to portion—let it sit at room temperature for a few minutes until a knife can cut through, then slice it into individual servings for convenience.
Making Spicy Clam Pasta
- Heat a pan over medium heat and add 2 Tbsp of olive oil. Sauté ¼ of a small onion, finely chopped.
- Add 3 cloves of minced garlic and cook for another 3–4 minutes, stirring frequently to prevent burning.
- Stir in the crushed chili flakes and toast them slightly to release their flavor.
- Add the baby clams and sauté briefly.
- Toss in the purged clams and pour in ¼ cup of white wine. Stir well, then cover the pan and let the clams steam until they open.
- Add 1½ large ladles of the prepared tomato base sauce and let everything simmer together. If any clams remain closed, discard them.
- Add the cooked pasta and toss everything together quickly.
8. Transfer to a serving plate.
