Ingredients
- 2 bananas
- 1 cup oatmeal
- 1/2 cup coconut flour (or almond flour)
- 1/2 tsp salt
- 1/4 tsp cinnamon powder
- 1 tsp baking soda
- 1/2 cup melted unsalted butter
- 1 large egg
All measurements are based on US/Canada measuring spoons and cups.
Instructions
- Mash the 2 bananas in a bowl until smooth.
- Add the oatmeal and dry ingredients (1/2 cup coconut flour or almond flour, 1/2 tsp salt. 1/4 tsp cinnamon powder, 1 tsp baking soda) to the bowl, and mix well.
- Melt the butter in the microwave and let it cool slightly.
- Add the melted butter and 1 egg to the bowl, then mix everything together thoroughly.
- Shape the dough into small balls, place them on a baking tray, and gently flatten them.
- Feel free to add dried fruits or nuts for extra flavor. I added 1/2 cup of dried cranberries.
- Bake in a preheated oven at 190°C (375°F) for 15–18 minutes.
- After baking, let the cookies cool on the baking tray for 5 minutes.
- Then transfer them to a wire rack to cool completely.
