Start Your Day Right with a Healthy Potato Galette!
Ingredients
- 1 potato
- 2 eggs
- 1/4 onion
- 1 strip of bacon
- 3 mushrooms
- A bit of cooking oil
- Salt and pepper
- Cheese
For Garnish
- Cherry tomatoes
- Leafy greens
Tip: You can also add Parmesan or mozzarella cheese for extra flavor.

Preparation
- Slice the potato as thinly as possible. To make slicing easier, trim the bottom of the potato first to create a flat surface, then place it on a cutting board. Alternatively, use a mandoline slicer for even, thin slices.
- Thinly slice the onion and mushrooms.
- Cut the cherry tomatoes in half and set them aside for garnish.
- Crack one egg into a bowl, add a pinch of salt, and whisk it well.
- Chop the bacon into small pieces.
Cooking Instructions
- Heat 1 tablespoon of oil in a pan over medium heat and sauté the sliced onion until slightly softened.
- Add the sliced mushrooms to the pan and sauté for about 1 minute.
- Cook the chopped bacon until crispy. Drain the excess bacon grease and set the bacon aside.
- Add 1 tablespoon of oil to the pan, then arrange the thinly sliced potatoes in a circular pattern. Cover the pan with a lid and cook on medium-low heat for 2–3 minutes, pressing the potatoes gently with a spatula to flatten them.
- Drizzle 1 more tablespoon of oil around the edges of the pan, cover, and cook for an additional 1–2 minutes. Pour the whisked egg evenly over the potatoes.
- Arrange the sautéed onion, mushrooms, and bacon on top of the egg in a small circular pattern.
- Crack the second egg into the center of the galette.
- Fold the edges of the potato slices inward to form a square shape.
- Sprinkle a little salt and pepper on top of the egg.
- Cover the pan and cook for 3–4 minutes until the egg is set.
- Transfer to a plate and garnish with leafy greens and cherry tomatoes.
- Grate Parmesan cheese on top, if desired.
Tip: For a simpler version, you can use a pre-cooked fried egg in Step 7.
